  • 2 cups fresh spinach (chopped)
  • 1 cup crumbled feta cheese
  • 2 cloves garlic (minced)
  • 4 oz cream cheese (softened)
  • 1 tsp dried oregano
  • ¼ cup toasted pine nuts
  • 3 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix chopped spinach, crumbled feta, minced garlic, softened cream cheese, dried oregano, and toasted pine nuts until well combined.
  3. On a clean surface, unroll phyllo dough and cut it into strips about 3 inches wide. Cover unused sheets with a damp towel.
  4. Brush one phyllo strip lightly with olive oil, place about one tablespoon of filling at one end, fold into a triangle shape, and seal with more olive oil.
