  • 1/3 cup apple juice (or barley tea/chicken broth)
  • 3/4 cup brown sugar
  • 3/4 cup soy sauce
  • 2 cloves garlic (minced)
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions

  1. Season the chicken thighs with kosher salt and pepper, placing them in the bottom of the crockpot.
  2. In a bowl, whisk together apple juice (or alternative), brown sugar, soy sauce, and minced garlic. Pour this mixture over the chicken.
  3. Cover the crockpot and cook on low for 4 hours or high for 3 hours.
  4. About 30 minutes before serving, mix cornstarch with cold water until smooth; stir into the sauce to thicken.
  5. Serve over rice and garnish with sliced green onions.
