  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour (or gluten-free alternative)
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt (plus more to taste)
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (or more cheddar) for topping
  • ¼ cup grated Parmesan for topping
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F. Grease a baking dish.
  2. Layer thinly sliced potatoes and onions in the dish.
  3. Melt butter in a saucepan over medium heat, add flour, then gradually whisk in almond milk until thickened.
  4. Stir in shredded cheddar cheese, garlic powder, salt, and pepper until smooth.
