6–7 medium Yukon gold potatoes, thinly sliced (about 3 pounds)
½ white or yellow onion, sliced
2 tablespoons salted butter
¼ cup all-purpose flour (or gluten-free alternative)
1 ½ cups unsweetened almond milk
8 ounces sharp cheddar cheese, shredded
½ teaspoon garlic powder
¾ teaspoon salt (plus more to taste)
Freshly ground black pepper
½ cup Gruyere cheese (or more cheddar) for topping
¼ cup grated Parmesan for topping

Instructions
Preheat your oven to 375°F. Grease a baking dish.
Layer thinly sliced potatoes and onions in the dish.
