  • 140 g unsalted butter (cold)
  • 24 g white grape juice (optional)
  • 1 cup ice water
  • 113 g unsalted butter
  • 56 g bittersweet chocolate
  • 21 g dutch process cocoa powder
  • 1 tsp espresso powder
  • 1/2 tsp salt
  • 113 g whole milk
  • 200 g granulated sugar
  • 106 g dark brown sugar
  • 25 g cornmeal
  • 4 eggs (room temp)
  • 1 tsp vanilla extract

Instructions

  1. Make the pie crust by mixing flour and salt, cutting in cold butter until crumbly. Add grape juice if using, then stir in ice water to form dough. Chill for 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out dough, fit into pie pan, and bake for 15 minutes until lightly golden. Cool.
  3. For the filling, melt butter and chocolate over low heat. Stir in cocoa powder, espresso powder, and salt. Once cooled slightly, whisk in milk, sugars, cornmeal, eggs, and vanilla until just combined.
  4. Pour filling into the crust and bake for 45–50 minutes until set but slightly jiggly in the center. Cool completely before serving.
