Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, combine eggs, brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined; fold in grated carrots.
  5. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely.
  6. For the frosting, beat cream cheese and butter until creamy; gradually add powdered sugar and vanilla until smooth.
