  • 1 ½ cups low-sodium chicken broth
  • 1 ½ pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 medium cucumber (sliced thinly)
  • ½ cup crumbled feta cheese
  • ½ cup chopped fresh parsley or dill

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine 1 cup of long-grain white rice, 1 ½ cups of low-sodium chicken broth, and 1 ½ pounds of bite-sized boneless skinless chicken breasts. Add 1 teaspoon each of garlic powder and onion powder, along with 1 teaspoon of dried oregano and ½ teaspoon of paprika. Stir until evenly mixed.
  3. Pour 1 cup of tzatziki sauce over the mixture and gently fold it in.
