  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1/4 tsp cayenne
  • 2 cans white beans, drained and rinsed
  • 2 lbs chicken breasts, raw (~3 large breasts)
  • 4 cups chicken broth
  • 2 (4 oz) cans green chiles
  • 1 can fire-roasted tomatoes
  • 1 can corn, drained and rinsed
  • 1 lime, juiced
  • 1/2 cup Greek yogurt (I used 2%)
  • Cilantro
  • Cheddar cheese
  • Jalapeno
  • Lime slices
  • Tortilla chips

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion; sauté until soft (about 5 minutes). Stir in minced garlic; cook for an additional minute.
  2. Add cumin, oregano, salt, pepper, chili powder, and cayenne to the pot; mix well.
  3. Mash one cup of rinsed white beans until smooth. Add mashed beans along with whole beans to the pot.
  4. Pour in chicken broth, green chiles, fire-roasted tomatoes, corn, and raw chicken breasts.
  5. Bring to a boil over medium-high heat; then reduce heat to low and simmer for 15-20 minutes until chicken is cooked through.
  6. Remove chicken from the pot; shred with forks once cool enough to handle. Return shredded chicken to the pot along with lime juice and Greek yogurt; stir until combined.
  7. Serve hot with optional toppings like cilantro and tortilla chips.
