  • 1 teaspoon dried parsley
  • 1/2 cup premium pomegranate juice
  • 1 cup premium pomegranate juice (for finishing)
  • 2 tablespoons unsalted butter
  • 1 tablespoon cornstarch + 3 tablespoons warm water

Instructions

  1. Marinate the lamb chops: In a bowl, mix garlic, thyme, olive oil, salt, pepper, garlic powder, and parsley. Rub this mixture all over the lamb chops and let marinate for at least 30 minutes.
  2. Sear the chops: Heat olive oil in a pan over medium-high heat. Sear each side of the lamb chops for about 3-4 minutes until browned.
  3. Prepare the sauce: In a saucepan, simmer ½ cup of pomegranate juice and stir in cornstarch mixed with warm water until thickened.
  4. Finish cooking: Reduce heat, add remaining pomegranate juice and butter; simmer for 5-7 minutes until fully cooked.
