  • 2 whole oranges
  • ⅔ cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • ½ cup fresh orange juice

Instructions

  1. Rinse and simmer the whole oranges in water for one hour. Drain and blend until smooth.
  2. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  3. In a mixing bowl, combine blended oranges, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract. Mix until smooth.
  4. Pour the batter into the prepared pan and bake for about an hour or until a toothpick inserted comes out clean.
  5. For the glaze, simmer honey with fresh orange juice until reduced by half. Brush over the cooled cake.
