  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • Salt, to taste
  • 4 shallots (diced) or 1 medium onion
  • 1 rib celery (diced)
  • 45 sprigs thyme
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, and cut into wedges)
  • 125 ml heavy cream

Instructions

  1. Preheat oven to 180C/350F.
  2. Pat chicken dry and sprinkle with salt.
  3. Heat olive oil in a large casserole dish over medium-high heat. Brown the chicken on all sides; set aside.
  4. In the same pan, sauté diced shallots, celery, and thyme until soft. Stir in minced garlic and apple juice.
  5. Sprinkle flour into the vegetable mixture, then gradually add chicken stock to create a thick sauce.
  6. Return chicken to the pan along with apple wedges; cover and bake for 30 minutes, then uncover and bake for another 30 minutes.
  7. Stir in heavy cream before serving.
