  • ½ cup beef broth or vegetable broth for vegetarian option
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme or 1 teaspoon fresh thyme
  • Fresh thyme sprigs for garnish
  • Extra Parmesan cheese for topping
  • Crispy fried onions (optional)

Instructions

  1. Caramelize the onions: In a skillet, heat butter and olive oil over medium heat. Add sliced onions, salt, and sugar (if using). Sauté until golden brown, about 20-25 minutes.
  2. Layer the potatoes: Preheat oven to 375°F (190°C). Grease a baking dish with butter. Arrange half of the potato slices at the bottom. Season with salt, pepper, garlic powder, and thyme; layer half of the caramelized onions on top.

  4. Top it off: Sprinkle shredded Gruyère cheese on top and cover with foil.
  5. Bake: Place in the oven for 30 minutes covered, then remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
