  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1/2 Baguette (for topping)
  • 1 tbsp Olive Oil
  • 1 tbsp Flour
  • 3 tbsp Water
  • 1 tsp Sugar
  • 2 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tbsp Garlic Powder
  • 1 tbsp Smoked Paprika Powder
  • 1/2 tsp Nutmeg

Instructions

  1. Thinly slice the onions and caramelize them in olive oil over medium heat for 30–40 minutes until golden brown.
  2. Add beef broth to the onions and simmer for an additional 10 minutes; set aside.
  3. In the same skillet, make a béchamel sauce by whisking flour into melted butter, then gradually adding heavy cream until thickened.
  4. Stir two-thirds of the caramelized onions into the béchamel sauce along with seasoning and Parmesan cheese.
  5. Cook cavatappi macaroni until just shy of al dente; combine with the béchamel sauce.
  6. Transfer to a baking dish, top with remaining onions and breadcrumbs from the baguette.
  7. Bake at 350°F (175°C) for 10-15 minutes until golden brown.
