  • 5 onions (thinly sliced)
  • 1/2 cup beef broth
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp flour + 3 tbsp water (for béchamel)
  • 1/2 baguette
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tsp sugar
  • Fresh parsley (chopped)
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. Slice the onions thinly to ensure even caramelization.
  2. In a skillet, heat olive oil over medium heat and sauté the onions for 30–40 minutes until golden brown. Add sugar if needed to enhance sweetness.
  3. Deglaze the pan with beef broth and simmer for an additional 10 minutes.
  4. Prepare the béchamel by whisking flour into melted butter, then gradually adding heavy cream until smooth.
  5. Mix two-thirds of the caramelized onions into the béchamel sauce along with salt, pepper, parsley, and Parmesan cheese.
  6. Cook cavatappi macaroni in salted water until slightly firm; combine with the sauce mixture.
  7. Transfer to a baking dish, top with remaining onions and breadcrumbs if desired.
  8. Bake at 350°F (175°C) for 10–15 minutes or until golden brown on top.
