  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch

  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by pressing the Pâte Sucrée dough into tartlet pans and freezing for 15-30 minutes.
  2. Preheat the oven to 375°F. Prick the dough with a fork, line with parchment paper, and bake until golden brown.
  3. Make strawberry jam by simmering chopped strawberries with sugar until thickened.
  4. Create the pastry cream by combining sweetened condensed milk, whole milk, and heavy cream in a saucepan, tempering egg yolks, and whisking until thick.
  5. Assemble by layering strawberry jam in cooled tartlet shells, piping in pastry cream, and garnishing with fresh strawberries.
