  • 95 g all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate, chopped
  • 56 g butter (salted or unsalted)
  • 2 large eggs, room temperature
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and add vanilla.
  3. In another bowl, whisk together eggs and both sugars until light and fluffy.
  4. Sift flour, cocoa powder, baking powder, and salt into another bowl; mix in chocolate chips.
  5. Gently fold the melted chocolate mixture into the egg-sugar mixture, then fold in the dry ingredients until just combined.
  6. Scoop tablespoon-sized portions onto the prepared tray, spacing them apart. Bake for 12-14 minutes until set.
  7. Optionally sprinkle with sea salt before cooling on the tray for about 10 minutes.
