  • 2.53 kg / 5-6 lb single turkey breast, skin on, bone in (not brined)
  • 12 garlic cloves, smashed with side of knife
  • Fresh herbs: 4 rosemary sprigs, 8 sprigs sage, 10 thyme sprigs
  • 150 g / 5 oz unsalted butter, softened
  • 1/2 tsp salt
  • 1 1/4 tsp table salt or 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 large garlic cloves, minced
  • 1 tbsp finely chopped sage, fresh
  • 1 tbsp finely chopped rosemary, fresh
  • 1 tbsp fresh thyme leaves, fresh
  • 1 tbsp finely chopped parsley leaves, fresh

Instructions

  1. Remove the turkey from the fridge and let it sit at room temperature for 45 minutes.
  2. Preheat the oven to 200C / 390F.
  3. In a baking dish, place smashed garlic cloves and fresh herbs.
  4. Mix softened butter with minced garlic, chopped herbs, salt, and pepper.
  5. Gently loosen the skin from the turkey breast and smear two-thirds of the herb butter under the skin.
  6. Flip the turkey upside down and smear remaining butter on the underside.
  7. Place the turkey in the pan over garlic and herbs. Roast until internal temperature reaches 75C / 165F.
