  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Salt and pepper to taste
  • Olive oil as needed

Instructions

  1. Roast the garlic by slicing off the tip of the bulb, drizzling with olive oil, wrapping in foil, and baking at 180C (356F) for 50-60 minutes until soft.
  2. Peel and dice baking potatoes; boil in salted water until fork-tender. Drain and let steam dry.
  3. Mash potatoes with butter and cream until smooth; mix in roasted garlic, Parmesan, salt, pepper, and egg yolks one at a time.
  4. Pipe potato mixture onto a lined baking tray into swirled shapes about 2.5-3 inches wide.
  5. Drizzle melted butter over each swirl and bake at 200C (400F) for 15-20 minutes or until golden brown.
