  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons chopped cilantro
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt (or to taste)
  • Freshly ground black pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lime juice, cilantro, chili powder, cumin, oregano, paprika, garlic powder, salt, and pepper. Place chicken breasts in a freezer bag and pour marinade over them. Seal tightly and massage to coat. Let it marinate in the refrigerator for at least one hour (up to three).
  2. Prepare for Cooking: Remove the chicken from the fridge 30 minutes before cooking for even grilling. Preheat your grill or oven to 400°F.
