  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Toss sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast on a baking sheet for 40–45 minutes until caramelized.
  2. In a skillet over medium heat, add remaining olive oil and cook diced onion until softened (about 5 minutes). Add ground beef and taco seasoning; cook until browned.
  3. Assemble bowls by layering roasted sweet potatoes first, followed by seasoned beef. Top with avocado slices and cottage cheese.
  4. Drizzle hot honey over each bowl before serving.
