  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or homemade equivalent)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F. Toss sweet potatoes with olive oil, spices, salt, and pepper in a large bowl. Spread them out on a baking sheet and roast for about 40–45 minutes until tender and golden.
  2. While the sweet potatoes roast, heat remaining olive oil in a skillet over medium heat. Sauté diced onion until softened; add ground beef seasoned with taco mix and cook until browned.
  3. In serving bowls, layer roasted sweet potatoes, ground beef, fresh avocado slices, and cottage cheese.
