  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • Optional: diced tomatoes and shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a lined baking sheet for about 40-50 minutes until tender.
  2. Heat olive oil in a skillet over medium heat. Sauté onions for 3-4 minutes until softened.
  3. Add garlic and red bell pepper; cook for another 2-3 minutes.
  4. Stir in ground turkey and cook until browned, about 6-8 minutes.
