  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into bite-sized pieces, then toss them with 2 tablespoons of olive oil, garlic powder, rosemary, salt, and pepper in a large baking dish.
  3. Bake the sweet potatoes for about 30 minutes until tender.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat; sauté the ground turkey with garlic powder, rosemary, salt, and pepper until browned.
  5. Slice the zucchini into rounds and quarter them.
  6. Combine the roasted sweet potatoes with browned turkey and chopped zucchini in the baking dish; mix well.
  7. Return to the oven for another 10 minutes.
  8. Drizzle with an additional 2 tablespoons of olive oil and top with parmesan cheese; bake for an additional 10 minutes until golden brown.
