  • 1 lb ground beef
  • 1 small onion (finely diced)
  • 2 cloves garlic
  • 2 cups peeled and chopped Yukon yellow potatoes
  • 1 bag (16 oz) frozen mixed vegetables
  • 2 cans (14.5 oz each) beef broth
  • 1 can (10 oz) condensed tomato soup
  • 1 can (15 oz) petite diced tomatoes
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil

Instructions

  1. In a pot over medium-high heat, brown the ground beef with onion, garlic, and salt until no longer pink. Drain excess grease.
  2. Add chopped potatoes, broth, tomato soup, diced tomatoes, mixed vegetables, Worcestershire sauce, parsley, and basil. Stir well and bring to a boil.
  3. Once boiling, reduce heat to medium-low and cover. Let it simmer for at least 30 minutes.
  4. Taste and adjust seasoning as needed before serving.
