  • 1 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 4 cloves garlic (minced)
  • 1 pound lean ground beef
  • 3 tablespoons flour
  • 1 (6 ounce) can tomato paste
  • 4 cups beef broth (+ more if needed)
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 2 Russet potatoes (peeled & diced)
  • 4 medium carrots (peeled & sliced)
  • 1 cup frozen peas (optional)
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion and celery for 5-7 minutes until soft.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in lean ground beef, breaking it apart as it cooks until browned (about 8 minutes).
  4. Sprinkle flour over the mixture and stir well; cook for 1-2 minutes.
  5. Mix in tomato paste, then pour in beef broth, Worcestershire sauce, Italian seasoning, diced potatoes, and sliced carrots. Bring to a boil, then reduce to a simmer and cover slightly ajar for at least 30 minutes.
  6. If using, add frozen peas before serving and season with salt and pepper to taste.
