  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. Add the leeks, carrots, celery, thyme, and sauté until soft (about 5 minutes). Stir in the garlic.
  2. Sprinkle in the flour and mix well. Gradually pour in the chicken stock while scraping any bits from the bottom. Season with salt and pepper.
  3. Add potatoes and turkey to the pot along with bay leaves. Bring to a boil, then cover and simmer on low heat for about 45 minutes.
  4. If desired, stir in cream before serving and garnish with fresh parsley.
