  • 1 yellow onion (diced)
  • 2 carrots (sliced)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed)
  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed)
  • 8 sprigs fresh thyme
  • 3 whole cloves
  • 2 bay leaves
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • 6 cups vegetable stock
  • 1/3 cup apple vinegar
  • sea salt and black pepper to taste
  • 1/3 cup fresh Italian parsley (roughly chopped)

Instructions

  1. Sauté diced onion and sliced carrots in a heavy-bottom pot over medium-low heat until the onion turns translucent.
  2. Add minced garlic and cook until fragrant.
  3. Incorporate rinsed jackfruit, thyme sprigs, bay leaves, and apple vinegar; simmer until vinegar evaporates.
  4. Whisk whole wheat pastry flour into vegetable stock; pour into the pot, stirring well.
  5. Allow to cook for about 45 minutes until jackfruit is fork-tender.
  6. Stir in gnocchi, diced tomatoes, and thawed peas; cook until gnocchi float.
  7. Season with sea salt and black pepper; discard thyme sprigs before serving.
  8. Finish with chopped parsley for freshness.
