  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 1 lb gnocchi (Italian potato dumplings)
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed out and rinsed)
  • 8 sprigs fresh thyme
  • 3 whole cloves
  • 2 bay leaves
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • 1/3 cup fresh Italian parsley (roughly chopped)
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup apple vinegar
  • sea salt + black pepper to taste

Instructions

  1. Sauté diced onion and sliced carrots in a heavy-bottomed Dutch oven over medium-low heat until the onion is translucent.
  2. Add minced garlic and rinsed jackfruit pieces along with fresh thyme sprigs, bay leaves, and apple vinegar; simmer until most vinegar evaporates.
  3. Whisk whole wheat pastry flour with vegetable stock; pour into the pot and bring to a gentle simmer. Stir in smoked paprika and whole cloves; cook for about 45 minutes.
  4. Add gnocchi, diced tomatoes, and thawed peas; cook until gnocchi float to the top.
  5. Discard thyme sprigs and whole cloves; stir in freshly chopped parsley before serving.
