  • 1 cup onion (diced)
  • 1 cup carrots (peeled & diced)
  • 1 cup celery (finely diced)
  • 1 teaspoon minced garlic
  • 2 quarts chicken broth
  • 1 tablespoon chicken base
  • 2 pounds boneless skinless chicken breasts
  • 4 cups egg noodles
  • Fresh thyme
  • Bay leaves
  • Salt
  • Pepper

Instructions

  1. In a large stockpot, heat olive oil over medium-high heat. Add onion, carrots, celery, and garlic; sauté until onions are translucent (5-7 minutes).
  2. Stir in chicken broth and chicken base; whisk to combine.
  3. Add chicken breasts, thyme sprigs, bay leaves, salt, and pepper. Stir gently.
  4. Bring to a boil, then reduce heat to simmer for about 45 minutes until the chicken is fork-tender.
  5. Remove bay leaves and thyme sprigs. Shred the chicken and return it to the pot.
  6. Bring the soup back to a boil; add egg noodles and cook for about 10 minutes until tender.
  7. Serve warm garnished with chopped parsley.
