  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat oven to 375°F. Arrange tortillas on baking sheets and bake for 3-5 minutes per side until golden brown; set aside.
  2. Cook ground beef in a skillet over medium-high heat until browned. Drain excess grease and add taco seasoning with water. Simmer for 10 minutes.
  3. Warm refried beans in the microwave for 1-2 minutes.
  4. Layer one tortilla with beans, followed by one-third of the beef mixture and another tortilla on top.
  5. Spread enchilada sauce on the top tortilla and sprinkle with cheeses, tomato, green onion, and olives.
  6. Repeat layering process until all ingredients are used.
