  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt and green onions for garnish

Instructions

  1. Boil salted water in a pot and cook rigatoni according to package instructions. Reserve half a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; sauté until golden brown.
  3. In the same skillet, add sliced carrots; cook until slightly softened. Stir in minced garlic for one minute.
  4. Lower the heat; melt butter then mix in honey, soy sauce, and black pepper to create the sauce. Simmer for two minutes.
  5. Return chicken to the skillet along with rigatoni; toss everything together until well coated. Use reserved pasta water if needed.
  6. Serve warm topped with chopped green onions.
