1 pound boneless, skinless chicken breast
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper, to taste
2 cups cooked brown rice or quinoa
1 cup corn kernels (fresh, canned, or frozen)
1 cup black beans, rinsed and drained
1 cup cherry tomatoes, halved
1/2 cup diced red onion
1/2 cup shredded lettuce or baby spinach
1/4 cup light ranch dressing
2 tablespoons BBQ sauce
Optional: fresh cilantro or green onions for garnish
Instructions
Marinate the chicken by mixing olive oil, garlic powder, smoked paprika, salt, and pepper. Coat the chicken breasts evenly and let sit for about 10 minutes.
Cook the marinated chicken in a grill pan over medium-high heat for about 6–7 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
While the chicken rests, prepare your grains according to package directions and chop your veggies.
Assemble your bowls by layering cooked grains at the base followed by corn, black beans, tomatoes, onions, greens, and sliced chicken.
Mix ranch dressing and BBQ sauce together; drizzle over the assembled bowls and garnish if desired.
