4 chicken breasts
3 eggs
½ cup all-purpose flour
1½ cups Italian-style panko breadcrumbs
2 cups cherry tomatoes
1½ cups fresh basil leaves
1 burrata
2 tbsp olive oil
3 cloves garlic
½ tsp kosher salt
¼ cup dry white apple vinegar
1 tsp lemon juice
1 tsp lemon zest
Oil for shallow frying
Instructions
Pound chicken breasts thinly between plastic wrap, then season with salt and pepper.
Set up a breading station with flour, beaten eggs, and panko breadcrumbs. Coat each cutlet in flour, dip in egg, then coat in breadcrumbs.
Heat oil in a skillet to 325°F. Fry cutlets for 2-3 minutes on each side until golden brown; drain on paper towels.
In the same skillet, sauté cherry tomatoes with olive oil until blistered. Add garlic and salt, then deglaze with vinegar. Mix in basil, lemon juice, and zest.
