  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)

  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1 rind of parmesan cheese (optional)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. Prepare the meatballs by mixing ground beef, bread crumbs, parmesan cheese, egg, minced onion, garlic, parsley, basil, red pepper flakes, salt, and black pepper until just combined. Form into 1-inch balls and set aside.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides; then remove them from the pot.
  3. In the same pot, sauté diced onion and carrots until softened. Add diced tomatoes and minced garlic; cook until fragrant.
  4. Pour in water and beef stock along with tomato paste and spices; bring to a simmer.
  5. Return the meatballs to the pot along with gnocchi and Parmesan rind (if using). Simmer until gnocchi float, about 3-5 minutes.
  6. Adjust seasoning as needed before serving hot with grated Parmesan on top.
