  • 5 cups de-stemmed and chopped kale
  • 1 can (15 ounces) chickpeas
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 3 tablespoons grated parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the gluten-free pasta according to package instructions. Drain and set aside to cool.
  2. Preheat oven to 400°F. Rinse and dry chickpeas thoroughly, then toss with olive oil and seasonings before baking on a parchment-lined sheet for about 30 minutes until crispy.
  3. Massage the kale leaves gently after chopping to soften them.
  4. Whisk together mayonnaise, Greek yogurt, parmesan, lemon juice, garlic, Dijon mustard, salt, and pepper to create the dressing.
  5. In a large bowl, combine cooked pasta, crispy chickpeas, kale, additional parmesan if desired, and drizzle with dressing. Toss until well mixed.
