  • 12 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • Lemon pepper seasoning
  • ½ cup apple cider vinegar
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 3 cloves garlic (minced)
  • 7 cups chicken broth
  • ½ chicken bouillon cube
  • 1 teaspoon soy sauce
  • Juice of 1 lemon (34 tbsp.)
  • ½ cup grated Parmesan cheese
  • 4 oz. angel hair pasta
  • ¾ teaspoon EACH: dried parsley, basil, oregano, mustard powder
  • 1 pinch turmeric
  • Salt/Pepper (to taste)

Instructions

  1. Heat olive oil in a pot. Season chicken with lemon pepper and sear until golden brown; then set aside.
  2. Sauté diced onions, carrots, celery, and garlic in the same pot until softened.
  3. Combine chicken broth with bouillon cube, soy sauce, lemon juice, and herbs; add to pot along with the chicken.
  4. Simmer for 15-20 minutes.
  5. Cook angel hair pasta separately; drain and add to soup.
  6. Stir in grated Parmesan cheese before serving.
