  • 1/2 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1/2 cup heavy whipping cream
  • 1/2 cup lemon Greek yogurt
  • 1 tbsp powdered sugar
  • 1/2 tsp lemon extract
  • 1/4 cup lemon curd
  • 1 1/2 cups white chocolate or yellow candy melts

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into mold cavities and freeze for 10 minutes.
  2. In another bowl, whip the heavy cream until soft peaks form. Fold in lemon yogurt, powdered sugar, and lemon extract. Chill for 10-15 minutes.
  3. Melt white chocolate or yellow candy melts and coat the inside of each mold cavity. Chill until set.
  4. Pipe half of the mousse mixture into each mold, add a spoonful of lemon curd in the center, then fill with more mousse.
  5. Press the crust base onto each filled mold to seal and freeze for at least 4 hours.
  6. Carefully unmold and let thaw for 10–15 minutes before serving.
