  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, sugar, vegetable oil, Greek yogurt (or applesauce), lemon zest, lemon juice, and vanilla until smooth.
  4. Combine the wet and dry ingredients gently until just mixed; avoid overmixing.
