  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 3 tbsp lemon juice (as a substitute for limoncello)
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for rolling)

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix granulated sugar and lemon zest until fragrant.
  3. Sift almond flour into the lemon sugar mixture and mix well.
  4. In another bowl, whip egg whites and salt until stiff peaks form.
  5. Gently fold in almond extract and lemon juice followed by the dry mixture until combined.
  6. Shape dough into balls, rolling in granulated sugar first, then powdered sugar.
  7. Place on prepared baking sheet and gently press down to create cracks.
  8. Bake for 22-25 minutes until golden at the bottom but still chewy inside.
  9. Cool on a wire rack before enjoying.
