Ingredients

  • 2 large Russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup plant-based bacon bits (or crumbled tofu)
  • 1/4 cup sour cream
  • 2 green onions, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub and dry the potatoes, then poke holes in them with a fork.
  2. Bake the potatoes for about 45 minutes until tender. Let cool slightly.
  3. Slice each potato in half lengthwise and scoop out some flesh, leaving about ¼ inch around the edges.
  4. Brush inside of each potato half with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and bake again for 10-15 minutes until crisp.
  5. Flip the potato halves over and fill with cheddar cheese and bacon bits (or chosen protein). Return to the oven for another 5-7 minutes until cheese is melted and bubbly.
  6. Serve hot topped with sour cream and chopped green onions.
