- 1 lb baby potatoes, halved
- 2 cups Brussels sprouts, trimmed and halved
- 1 large carrot, sliced
- 1 red bell pepper, sliced
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
- Preheat oven to 400°F (200°C).
- In a large bowl, combine halved baby potatoes, Brussels sprouts, sliced carrot, bell pepper, and onion wedges.
- In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, garlic powder, salt, and pepper.
- Pour the dressing over the vegetables and toss until well-coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 25-30 minutes or until tender and caramelized; stir halfway through cooking.
