  • 1 lb baby potatoes, halved
  • 2 cups Brussels sprouts, trimmed and halved
  • 1 large carrot, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine halved baby potatoes, Brussels sprouts, sliced carrot, bell pepper, and onion wedges.
  3. In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, garlic powder, salt, and pepper.
  4. Pour the dressing over the vegetables and toss until well-coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 25-30 minutes or until tender and caramelized; stir halfway through cooking.
  7. Remove from oven and garnish with fresh parsley before serving.
