  • ½ cup sun-dried tomatoes (roughly chopped)
  • ½ to 1 cup vegetable broth
  • 2 15-oz cans butter beans (drained)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream (or half-and-half)
  • ½ cup grated parmesan (or nutritional yeast)
  • 2 Tbsp chopped fresh basil

Instructions

  1. In a large sauté pan, melt 2 tablespoons of unsalted butter over medium heat. Add minced garlic, salt, oregano, crushed red pepper flakes, smoked paprika, and black pepper. Sauté for about 2 minutes until fragrant.
  2. Stir in chopped sun-dried tomatoes, vegetable broth, and drained butter beans. Cook uncovered over medium heat for 5 minutes to blend flavors.
  3. Remove from heat; fold in fresh spinach until wilted. Stir in heavy cream and grated parmesan (or nutritional yeast) along with fresh basil until well combined. Serve warm.
