  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 5 garlic cloves, minced
  • Fresh basil for garnish

Instructions

  1. Mix seasoning (basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and pepper) in a bowl.
  2. Rub half of the seasoning mix into both sides of the salmon fillets.
  3. Heat olive oil in a skillet over medium-high heat and sear salmon for 4-5 minutes on each side until golden.
  4. Remove salmon and sauté garlic and sun-dried tomatoes in the same skillet until fragrant.
  5. Deglaze with chicken stock and scrape up brown bits from the pan.
  6. Stir in heavy cream, remaining seasoning mix, and parmesan cheese; simmer until thickened.
  7. Return seared salmon to skillet, spooning sauce over it; cook for an additional few minutes.
  8. Serve garnished with fresh basil.
