  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken pieces seasoned with salt, pepper, oregano, paprika, and cumin. Cook until browned (5-7 minutes). Set aside.
  2. Sauté Aromatics: In the same skillet, add more oil and sauté onion and garlic until fragrant (3-4 minutes). Add bell pepper; cook for an additional 2 minutes.
  3. Cook Rice: Stir in rice and toast for 1 minute. Add diced tomatoes and chicken broth; bring to a simmer.
  4. Combine: Return chicken to the skillet and stir gently. Cover and reduce heat; simmer for 20-25 minutes until rice is tender.
  5. Finish: Incorporate olives and feta cheese, fluffing the rice with a fork. Let sit for a few minutes before serving.
  6. Garnish: Top with fresh parsley or basil before serving.
