  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 small zucchini, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • Fresh parsley for garnish
  • 1 tbsp fresh lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté chopped onions for 2–3 minutes until soft; add minced garlic and cook until fragrant.
  3. Add ground beef, breaking it up as it cooks; season with salt, black pepper, cumin, smoked paprika, oregano, and optional red pepper flakes.
  4. Cook until the beef is browned (about 5–7 minutes), stirring occasionally.
  5. Stir in diced bell pepper and zucchini; cook for an additional 5 minutes until tender.
  6. Add halved cherry tomatoes and sliced kalamata olives; cook for another 2 minutes.
  7. Remove from heat and stir in fresh parsley and lemon juice before serving.
