  • 2 tablespoons olive oil (plus more for roasting)
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper on a lined baking sheet. Roast for 25-30 minutes until golden.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cumin; cook for another minute until fragrant.
  3. Add roasted cauliflower and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer for 10 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Stir in fresh lemon juice and adjust seasoning as needed.
  6. Serve hot, garnished with parsley if desired.
