  • 1 can (14.75 ounces) cream-style corn
  • 1 cup frozen corn
  • 1 can (10 ounces) diced tomatoes and green chilies
  • 1 packet (1 ounce) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy cornbread mix
  • 2 eggs
  • ⅓ cup whole milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown 1 pound of ground beef over medium heat until cooked through; drain excess fat.
  3. Stir in 1 can cream-style corn, 1 cup frozen corn, 1 can diced tomatoes and green chilies, and 1 packet taco seasoning; cook for 5 minutes.
  4. Sprinkle half of the cheese (1 cup) over the mixture.
  5. In a bowl, combine 1 box Jiffy cornbread mix, 2 eggs, and ⅓ cup milk; stir until just combined.
  6. Pour cornbread batter over the beef mixture; bake for 20-25 minutes until golden brown.
  7. Add remaining cheese on top; return to oven for an additional 5 minutes until melted.
  8. Let cool slightly before serving.
