  • 1 cup packed brown sugar
  • 1 cup cold butter
  • 5 large eggs
  • 1 cup maple syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly spray two 12-cup muffin tins with non-stick cooking spray.
  3. In a mixing bowl, combine flour and brown sugar. Cut in cold butter until coarse crumbs form.
  4. Press small portions of dough into each muffin cup to form crusts.
  5. In another bowl, whisk together eggs, maple syrup, granulated sugar, vanilla extract, and salt. Stir in chopped pecans.
  6. Pour filling into each crust until just full.
  7. Bake for about 40 minutes or until the edges are golden brown and the center is set.
  8. Cool in pans for about 10 minutes before transferring to a wire rack.
