Ingredients

Scale
  • 8 ounces pasta (linguine or fettuccine)
  • 1 pound large shrimp, peeled and deveined (or grilled chicken/sautéed tofu)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 8 ounces mushrooms, sliced (cremini or button)
  • ½ cup heavy cream (or half-and-half)
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve some pasta water before draining.
  2. In a large skillet over medium heat, combine olive oil and butter. Add shrimp and sauté until pink and opaque, about 3-4 minutes per side.
  3. Stir in minced garlic and sliced mushrooms; cook until mushrooms are tender, about 5 minutes.
  4. Pour in heavy cream while stirring gently; let it simmer for a few minutes until slightly thickened. Season with salt and pepper, then add Parmesan cheese.
  5. Toss in the drained pasta, mixing until well combined. If needed, add reserved pasta water to reach desired consistency.
  6. Serve warm, garnished with fresh parsley and extra Parmesan.
