  • 16 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ cup raw walnut halves
  • 1 ¼ cups cooked pearled barley
  • 1 cup cooked pinto or black beans
  • 2 tablespoons vegan worcestershire sauce
  • ½ cup panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon fine sea salt
  • black pepper

Instructions

  1. Sauté the onion and mushrooms in a large pan over medium-low heat for about 15 minutes until the mushrooms release their liquid. Add garlic, thyme, and smoked paprika; cook for an additional 2-3 minutes.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled. Combine sautéed vegetable mixture with barley, beans, nutritional yeast, vegan worcestershire sauce, panko breadcrumbs, salt, and pepper; process until chunky.
  4. Shape mixture into patties using about scant ½ cup of mixture per burger.
  5. Bake for 30-35 minutes on the prepared sheet, flipping halfway through until golden brown.
