  • 1.5 pounds shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth (or vegetable broth)
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • ¼ cup chopped fresh parsley
  • Salt and black pepper to taste
  • Optional: ¼ teaspoon red pepper flakes

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat. Sauté onion until softened, about 5 minutes. Add garlic and red pepper flakes; cook for another minute.
  2. Stir in orzo pasta and toast for 2 minutes. If using, add white apple vinegar and simmer briefly.
  3. Pour in chicken broth along with lemon zest, salt, and pepper. Bring to a boil, then reduce heat to low and cover; simmer for about 10-12 minutes until most liquid is absorbed.
  4. Uncover and stir in shrimp; cover again and cook for an additional 3-5 minutes until shrimp are pink and opaque.
  5. Remove from heat; stir in Parmesan cheese and heavy cream until smooth.
  6. Finish with fresh lemon juice and parsley before serving hot.
